Sugary Cinnamon Rolls


  • 150g Bread Flour
  • 3g Yeast
  • 2g Salt
  • 3g Cinnamon Powder
  • 25g Sugar
  • 45g Eggs
  • 50g Water
  • 30g Softened Butter


  1. Mix the Bread Flour, Yeast, Salt, Cinnamon Powder and Sugar into a dry mixer bowl
  2. At LOW speed, slowly add in the Eggs and Water. Mix until they are all well blended
  3. Increase the speed to MEDIUM, add in the Butter. (Note: The dough will be sticky. Do not attempt to add in more flour!)
  4. Cover the dough with a wet cloth for 30 to 45 minutes
  5. Make the dough into 6 equally rolls. Hit them with your palm to release the gas.
  6. Slowly stretch the dough into a long rectangle shape
  7. Preheat the oven to 180°C

Ingredients for the Cinnamon Spread

  • 15g Softened Butter
  • 25g Fine or Caster Sugar
  • 3g Cinnamon Powder
  • 1 Egg (For Egg Wash / Glaze)


  1. Mix the Butter, Fine Sugar and Cinnamon Powder well in a dry bowl
  2. Spread the mixture evenly onto the rectangle dough. Then Roll them up like a swiss roll.
  3. Arrange the dough into a greased tin and cover the tin with a wet cloth for 45 minutes to 1 hour.
  4. Egg wash the dough.
  5. Bake the dough for 12 to 15 minutes
